What will be your mission?
As a Chef specializing in Mexican Cuisine you will be responsible for designing, leading, and executing the culinary operation of a restaurant specializing in Mexican cuisine. You will be in charge of the direction and coordination to successfully execute all culinary operations, continuously seeking to improve the guest experience and maximize the financial performance of the department. You must guarantee the authenticity, presentation and quality of the Mexican gastronomic offer, maintaining a balance between tradition and innovation.
What will you do?
- Lead the operational, budgetary and personnel planning of the kitchen area.
- Design, develop and update menus with Mexican identity, prioritizing local ingredients, traditional techniques and modern presentation.
- Organize the shifts and schedules of the personnel in charge, managing absences and operational needs.
- Select, train, and evaluate the culinary team on a constant basis.
- Attend to and resolve suggestions or complaints from customers related to the culinary.
- Collaborate with other hotel departments to align goals and processes.
- Supervise compliance with quality, food safety, environmental and occupational risk prevention standards.
- Efficiently manage the human and material resources assigned.
- Lead the control of inventories, orders, costs and margins of the area.
- Actively participate in gastronomic innovation initiatives.
What are we looking for?
- At least 2-3 years of experience as a Sous Chef or similar position, in restaurants of this specialty, excluding.
- Solid knowledge and execution of traditional techniques of Mexican cuisine.
- Experience in signature cuisine.
- Knowledge in kitchen management, costs, menu planning, and team leadership.
- Experience in menu design, cost control and comprehensive operation of professional kitchens.
- Technical or professional training in gastronomy, relevant knowledge of Mexican cuisine.
- Knowledge of English will be a plus.
- Knowledge of food hygiene and occupational safety practices.
- Management of computer tools such as Microsoft Office and gastronomic management software.
- Knowledge of SAP will be an asset.
