What will be your mission?
As Commis Chef Butcher (M/F), you will be responsible for the preparation, portioning, and presentation of all meat and fish items in accordance with established recipes, standards, and hygiene regulations. The role ensuring consistent quality and efficient operations within the butchery section. Achieving the highest degree in applied hygiene and food safety as per the, HACCP guidelines to ensure that the food served to the Guest is of highest quality and standard.
What will you do?
- Organizes preparation work according to the menu and makes the necessary requests.
- Participates in planning and purchasing food products for day-to-day use and for existing stocks, avoiding shortages.
- Supervises junior chefs, effectively taking charge of certain sections in the kitchen to guarantee quality and compliance with defined procedures, intervening with them whenever necessary.
- Ensure that all dishes from their section are cooked to perfection and served on time.
- Responsible for maintaining high hygiene and safety standards in the kitchen. This involves ensuring all tools and workspaces are clean, tidy, and functional.
- Elaboration, conservation and organization of the mise-en-place for each of the services, minimizing product losses.
- Guarantee the presentation, quantity and quality of each dish of the service, based on the established standards.
- Check and control the proper storage of products, monitoring age and condition of all food items to rotate and maintain highest quality (FIFO).
- Reception, conservation and organization of the products of your departure.
- Maintain a clean, neat and well-organized work area.
- Report maintenance, hygiene and hazard issues.
- Awareness of departmental targets and strive to achieve them as part of the team.
- Follow all relevant health department rules/regulations and all customer service guidelines (HACCP).
What are we looking for?
- Professional experience in similar roles. 4 or 5 star hotels or top category restaurants/bars (preferred).
- Vocational training on hospitality/F&B/kitchen .
- Fluency in local language is a must and knowledge of English is highly valuable.
- Ability to work on his/her own and as part of a team.
- Organizational skills.
- Ability to work under pressure.
- Customer service oriented.
- Focus on detail.
