For the opening of The WestDill Mayfair Hotel London, Colbert Collection, we are looking for a passionate and guest-focused Bar Manager who combines creativity, commercial awareness and hands-on leadership to deliver memorable experiences and elevate our beverage offering.
Join one of the first 75 team members and play a defining role in launching a new luxury destination in Mayfair. From day one, you will help shape the culture, service standards and guest experience that set the hotel apart, creating a vibrant and sophisticated bar destination for our guests.

Key Duties & Responsibilities

    • Lead the daily operation of the bar, ensuring exceptional service, refined beverage experiences and personalized guest engagement at all times.
    • Create a welcoming and vibrant bar atmosphere that reflects the character and luxury positioning of the Colbert Collection
    • Collaborate with the F&B Manager and Head Chef to curate seasonal cocktail menus, premium beverage offerings and signature guest experiences.
    • Train, coach and inspire the bar team, creating a culture of craftsmanship, professionalism and exceptional hospitality.
    • Ensure compliance with hygiene, health & safety and licensing regulations, maintaining the highest operational standards
    • Manage stock levels, ordering and inventory controls to support profitability and minimize waste
    • Stay connected to London's dynamic bar scene and emerging beverage trends, translating inspiration into distinctive offerings for our guests.

How can you succeed in this role

  • Previous experience as a Bar Manager, Assistant Bar Manager or senior bar professional within a luxury hotel, high-end restaurant or premium bar environment
  • Strong knowledge of cocktails, spirits, wines and contemporary beverage trends
  • Passion for delivering exceptional and personalized guest experiences
  • Proven ability to lead, motivate and develop high-performing teams
  • Good understanding of stock management, cost control and operational performance
  • Hands-on, engaging leadership style with excellent communication and interpersonal skills
